Havarti
This beautiful cheese of Danish origin has a mild paste and flexible texture! I make this cheese with our girl's goats milk, mesophilic culture, liquid veal rennet and Baja Gold mineral sea salt. It is aged in a ripening container until dried and waxed with clear wax to age anywhere from two weeks to months!
ELBF White Cheddar
This cheddar is made with our girl's goats milk, my very own culture (made from our girl's goats milk), liquid veal rennet and Baja Gold mineral sea salt! It is waxed with clear wax and ages for a month to make a mild cheddar!
Pepper Cheddar
This spicy cheddar is made with our girl's goats milk, mesophilic culture, liquid veal rennet, jalapeno and red peppers, Baja Gold mineral sea salt. It is clear waxed and ages for a month.
Brie
Made with our girl's goat milk, mesophilic culture, penicillium candidum mold powder, liquid veal rennet, Baja Gold mineral sea salt. Aged in a ripening container and babied for a month!
Gouda
Made with our girl's goats milk, mesophilic culture, liquid veal rennet and brined in Baja Gold mineral sea salt water, waxed with black wax to bring out the whiteness of this cheese! This beautiful cheese is aged for six weeks!
Jalapeno Jack
Made with our girl's goats milk, mesophilic culture, liquid veal rennet, jalapeno peppers, brined in Baja Gold mineral sea salt water, clear waxed and aged for two months!
Cottage Cheese
Made with our girl's goats milk, mesophilic culture, liquid veal rennet, Baja Gold mineral sea salt. The cheese curds are washed and lightly salted. This is nothing like store bought and taste delightful!
Butter
Oh my goodness! This butter is absolutely divine! Made with our girl's goats milk cream and salted with Baja Gold mineral sea salt! Since goats milk is naturally homogenized, I have to send the girl's milk through a cream separator, I then whip the cream to remove the buttermilk and wash until the water runs clear!
Love making the sticks with this butter since you can easily measure out a tablespoon at a time!
Judean Labneh
Made with our girl's goat milk yogurt cheese, Judean green spices, Baja Gold mineral sea salt and Olive Oil. Talk about so good!!
Yogurt
Made with our girl's goats milk and my own cultures! This yumminess is warmed to 111 degrees for 20 hrs, refrigerated for 24hrs, strained for another 24hrs to make creamy thick goodness! I make Plain, Vanilla, Coconut!
Frozen Yogurt
Made with our girl's goat yogurt, our farm fresh eggs, our cream cheese, raw cane sugar, homemade vanilla extract, churned into the absolute best tasting frozen "healthy" snack! I make Vanilla and Lemon for now! The Lemon one is WOW!
Hot Pepper Chevre
Made with our girl's goats milk, my very own culture, liquid rennet fermented for 24hrs, drained for correct texture, dried jalapenos and red peppers! Beautiful spreadable cheese for crackers, sandwiches etc!
Cream Cheese
This yummy cheese is made with our girl's goats milk and my very own culture THAT'S IT! It is fermented for 24hrs and then strained until correct consistency! It's a very mild tasting cream cheese! I make plain and garlic butter flavor! With the plain , I make a pretty tasty cheesecake! The garlic one is great for a spread on crackers, pita bread etc and wonderful to add on potatoes....
Cheesecake
The cake is made with my cream cheese, our farm fresh eggs, raw cane sugar, flour, Baja Gold mineral sea salt and homemade vanilla extract! The crust is made with graham crackers and our goat butter! This is truly the best tasting cheesecake! Toppings not needed!
